Avocado Pound Cake

BM#12Day3: Ever since I saw this posted at "Joy the Baker" blog, I have been wanting to bake an avocado cake.I finally made this over the weekend for my sister when I went over to her place for a visit. Anything made out of Avocado tastes exceptionally good and this is no exception. The whole family loved it!  

Note: Don't go overboard with the addition of avocados. I was greedy cause I wanted a vivid green color and I added 1/4 Cup more. That makes the batter super-dense and the baking powder/soda in the recipe isn't sufficient to leaven the batter.The inner most part of the cake was slightly under-cooked. So my advise to you is, stick to 3/4 Cup for the 9" X 5" loaf, which is what the original recipes suggests. No more, no less. Capisce? 
Away from the Sunlight-
Ingredients(Makes 1 9" X 5" Loaf):
  • 1-1/2 Cups Unbleached All-Purpose Flour
  • 1/4 Cup Stone-Ground Yellow Cornmeal
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1-1/2 Cups Granulated Sugar
  • 1/4 Tsp Salt
  • 6 Tbsp Butter, at room temperature
  • 2 Farm Fresh Eggs, at room temperature
  • 1 Tsp Vanilla Extract
  • 1/3 Cup Buttermilk, at room temperature
  • 1 Ripe Avocado (~3/4 Cup)
Procedure:
  • Sift the flour, baking soda, baking powder in a wide bowl. Add salt and cornmeal to mix well using a whisk.
  • Peel and cube the avocado. Slightly smash it. Don't use more than 3/4 Cup of smashed avocado for 9" X 5" loaf.
  • Cream the butter and sugar, for about 3-4 minutes. Add the smashed avocado and mix it at medium speed for a minute more.
  • Add eggs, one at a time and mix well to incorporate.
  • Add little buttermilk.
  • Add flour in batches. And mix only till it is combined.
  • Lastly add the Vanilla extract.
  • Scrape the batter from the sides of the bowl and give it one final mix. Preheat the oven to 325 degrees F.
  • Line the loaf pan with aluminum foil. Grease it with little butter. Transfer the batter to the load pan. Bake it for 45 minutes-50 minutes. Check periodically after 40 minutes.
  • Remove from the oven and let if cool completely before cutting.

    And regarding your question about fresh produce. I too was contemplating on what comes under fresh produce and generally went with veggies / fruits. I think ginger can be accepted as fresh produce since we use it fresh eventhough it is a spice. And probably dry dates don't count since dates are available fresh too.
